Question : Where can I find very tasty recipes for chicken breasts?
I tried cooks.com and allrecipes and they didn't seem to have what I want and chicken breast meat is very dry once cooked so I need some recipes that retain the moisture.

I RECOMMEND "FOOD NETWORK". DON'T COOK YOURCHICKEN AT ANY HIGHER TEMP THAN 350 DEGREES. COVER WITH LID OR FOIL AT LEAST 1/2 OF THE COOKINGTIME. IT WILL LOCK IN MOISTURE, AND THE SECONDHALF OF THE COOKING TIME WILL LET THE MEAT BROWN. TRY THIS:1 OR 2 BOXES(depends on how many u planto serve) OF UNCLE BENS LONG GRAIN AND WILDRICE(cook as directed). PUT RICE IN DEEP BAKINGDISH,PUT RAW CHICKEN ON TOP. GET A FAMILY SIZECAN OF CREAM OF CHICKEN SOUP, ADD 3/4 CAN OF MILKTO IT, AND POUR OVER CHICKEN AND RICE. BAKE 1HOUR (COVER 40 MIN.) AT 350 DEGREES. CHICKEN ISAMAZINGLY TENDER, AND SUPER MOIST. IF YOU WANT TOZEST IT UP A LITTLE, USE 3/4 CUP WATER, AND 1/4CUP WHITE WINE INSTEAD OF MILK.

I dont remember where I heard this from but Iheard if you soak your chicken breast in saltwater (just enough water to cover the chicken) andlet it soak during the day before you cook it orover night it helps the chicken turn out reallymoist and juicy. Havent tried it yet though justfound it a couple of days ago. Hope that helps.

You probably need some sauce on it while you arecooking....here are a couple of ideas.....chickenbreast topped with cut up mushrooms, some dots ofbutter and wine poured over the top...then wrapvery tightly with foil, or in a baking bag (withall the liquid, etc.) and bake untildone....called "silver chicken"...I served this to100 people who loved it.Also...old chickenfavorite.....greased pan with rice and liquid inthe bottom...chicken on top and cover withmushroom soup mixed with sour cream. When doneyou have delicious chicken and rice. Bake forawhile in the oven....can bake for quite awhile ifyou want it to.....serve the mushroom sauce overthe rice with the chicken.(Judge the amount ofsauce needed for the amount of rice you aremaking). Extra sauce can always be served withthe dishes. You can use soups, marmelade, italiansauce, barbeque sauce etc. when you bake thechicken...(one kind, not all at once).....willkeep the chicken tender.

Easiest way to retain moisture is DO NOT OVER COOKIT. Most people cook chicken for 45 min to an hourand it is WAY too long, it then comes out likesawdust. Only cook it to 170 degrees and stop..Should only take about 30 min or less depending onthe piece and size. Try the recipies without overcooking, I have never found a chicken recipie thatmy family didn't love.
