Yesterday night, I bought my sister a box ofchocolates at Godiva for Christmas (I tend to domy Christmas shopping early). My cousin said thatthe chocolate might go bad since Christmas isn'tfor over a month. He said it might turn whitish.At what point does chocolate go bad? Keep in a cool dry place, away from sunlight andmoisture and you should have no problems.Whenchocolate turns white or spotty (called bloom) itis a result of the sugars or cocoa butterseparating from the rest of the chocolate. Itactually does not effect the taste of thechocolate that much, mostly just the looks. You'llget this when the chocolate is stored or subjectedto a higher temperature than it was made for. Youcan also get discoloration from moisture, you canget this if the chocolates are frozen and thenexposed to the air before they come to roomtemperature, the condensation that forms will alsodiscolor the chocolate. It is possible to freezechocolate, but it must be sealed (triple layers ofshrink wrap), and must come to room temperature(overnight) before the wrap is removed. - answered by: CCBerries

Though I can't give you the actual recipe, I cansuggest melting down Godiva chocolate and usingthat in your recipe instead of regular bakingchocolate. It will give you a richer chocolateflavor. Godiva Chocolate melts very nicely, andis also great to use when you want to make yourown chocolate covered strawberries (which alwaysgo great with cheesecake!). - answered by: SS

Godiva is very very rich chocolate. It is also abit pricey, as it is of such high quality.Thewebsite is www.godiva.com. I'm not sure whatretail stores sell it in Australia, but Godivadoes export from the US to other countries. I would do it just to see if it works.Melt thechocolate in a double boiler. Warm the cream in asaucepan or microwave but be careful not to scald.Add the warm cream to the chocolate (still in thedouble boiler) and mix together until evenlycombined. Beat the mixture until the ganache issmooth and glossy. Remove from the heat and serve.For extra zing add a couple of teaspoons of yourfavorite liqueur or spirit to the ganache. Thisrecipe actually says to add liqueur for zing, butyou already have it in your Godiva chocolates. - answered by: flo
